Flaky, buttery layers hiding pockets of melted cheddar and fresh herbs β these biscuits do not need apology or explanation. They just need to be eaten hot from the oven, ideally right over the sink because they are too good to wait for a plate. Your discard is the secret that makes them taste bakery-special.
Preheat oven to 425Β°F. Line a baking sheet with parchment paper.
Whisk flour, baking powder, salt, and garlic powder together in a large bowl.
Add cold butter cubes. Working quickly with your fingers or a pastry cutter, break the butter into the flour until you have a mix of pea-sized and corn-kernel-sized pieces. Visible chunks of butter are what create flaky layers β do not cut them too small.
Toss the shredded cheddar, chives, and thyme into the flour-butter mixture until coated.
Add cold discard and cold buttermilk. Mix with a fork until dough just barely comes together β it will look shaggy and rough. That is exactly right. Do not overwork it.
Turn dough onto a lightly floured surface. Pat gently into a 1-inch-thick rectangle. Fold in half like a letter, pat back to 1 inch, and fold once more. This creates layers. Pat to 1-inch thickness one final time.
Using a sharp 2Β½-inch round biscuit cutter, press straight down without twisting β twisting seals the edges and prevents rising. Place biscuits on prepared baking sheet, sides touching for soft biscuits or 2 inches apart for crustier ones. Bake 15β18 minutes until tall, golden brown on top, and cooked through.
The moment they come out of the oven, brush generously with garlic butter. Serve immediately. These do not keep well and do not need to β they will be gone before they cool.
