✦ The Discard Vault ✦

Don't you dare throw that away.

"Discard is just starter that hasn't reached its full potential yet. Every bit of it deserves a second chance."

What is sourdough discard?

Every time you feed your starter, you remove a portion before adding fresh flour and water. That removed portion is called discard β€” and it is anything but waste. It's packed with wild yeast and bacteria that add incredible flavor to everything it touches, with nothing artificial added. These recipes are designed specifically for discard at any stage, from brand new starter to a well-established one.

Discard Recipes

Cheddar Herb Biscuits

Flaky, buttery layers hiding pockets of melted cheddar and fresh herbs β€” these biscuits do not need apology or explanation. They just need to be eaten hot from the oven, ideally right over the sink because they are too good to wait for a plate. Your discard is the secret that makes them taste bakery-special.

Mama's Pizza Dough

Your discard has been waiting for this moment. This pizza dough is tender inside, beautifully crispy on the bottom, and carries just enough sourdough character to make people ask what your secret is. One batch makes two thin-crust pies or one gorgeous thick-crust pizza β€” your call.

Peach Cobbler Muffins

All the cozy warmth of a peach cobbler packed into a handheld muffin with a buttery streusel top. Fresh Georgia peaches sink right into the tender discard batter, and the cinnamon streusel gets all golden and crunchy on top. Best eaten warm with a pat of butter and absolutely no apologies.

Sourdough Banana Bread

This is the banana bread recipe that will make your neighbors come knockin'. The sourdough discard adds a depth of flavor that regular banana bread just cannot touch β€” a gentle tang that plays beautifully against the sweet, caramelized banana. Dense enough to slice, moist enough to eat plain, and perfect enough to share. Or not.

Sourdough Discard Naan

A same-day way to use up a big jar of hungry discard. Yogurt makes the dough tender and a little tangy, and a hot skillet does the rest. No oven, no overnight wait, just a soft, blistered flatbread good for scooping up whatever you're eating alongside it.

Sourdough Discard Skillet Cookie

For the days when you want to use up discard and eat dessert inside of an hour. One skillet, one bowl, no waiting on fermentation of any kind. This is a butter-and-brown-sugar cookie, not a bread, so don't expect it to behave like one.

Sourdough Discard Soft Pretzels

Chewy, dark gold, and finished with plenty of coarse salt, these come from a boil-then-bake dough enriched just enough to make them tender. A splash of instant yeast alongside the discard keeps the timeline predictable even on a day when your starter isn't at its most energetic.

Sourdough Waffles

The crispiest, most flavorful waffles you will ever put in your mouth β€” and we mean that. The sourdough discard gives them a light tang and the buttermilk makes them impossibly fluffy. The outside shatters. The inside is soft and airy. They stay crispy, too, which is a miracle in waffle form.
